Inject with salt, the types of peppers and apple cider. Typical BBQ rub of salt, pepper, garlic powder, onion powder, paprika, dry mustard.
Put the shoulder on my Weber at 220degrees with kingsford charcoal, hickory and apple.
I keep temp consistent with my thermoworks smoke until I hit an internal temp of at least 190. Than shredding time.
Sorry, no finished product today. Guests were eating while I was shredding.
